Ochopee Chocolate Chip Cookies

2 1/4 cups unsifted flour
1 teaspoon baking soda
1 cup margarine, softened
1/4 cup sugar
3/4 cup light brown sugar
1 teaspoon vanilla
1 package instant vanilla pudding
2 eggs
1 12 oz. package chocolate chips
1 cup chopped nuts (optional)

Mix flour with baking soda;
Combine margarine, sugars, vanilla and pudding mix in large mixer bowl;
Beat until smooth and creamy.
Beat in eggs.
Gradually add flour mixture and then stir in chips and nuts.

Drop big, rounded, measuring teaspoonsful about 2 inches apart onto ungreased baking sheets.
Bake at 375 degrees for 8 to 10 minutes.

Makes a mere 7 dozen.

Mom's Granola

Preheat oven to 300 degrees.

Combine in large, heavy roasting pan:
1 cup whole wheat flour
1 1/2 cups dry skim milk
1 1/2 cups wheat germ
1 cup sesame seeds
6 cups rolled oats
1 cup sunflower seeds, shelled, unroasted
1 cup Grape Nuts

Combine in sauce pan:
3/4 cup canola oil
1/2 cup honey
2 tablespoons molasses
1 teaspoon vanilla

Warm sauce pan ingredients over low heat to bend. Pour into dry mixture, stirring well.

Roast for 45 - 60 minutes, stirring every 15 minutes at first, then more frequently until particles are golden brown.

After mixture has cooled, add:
2 cups raisins
1 cup walnuts or pecans, chopped

Store in tightly covered containers in cool, dry place.

Carol's Spaghetti Sauce

Take:
2 cloves garlic, minced.
2 lb. ground turkey.
I large onion, chopped.
Brown together (optional: add one green pepper, chopped, as you brown).
Drain excess fat.

Add:
1 lb can chopped tomatoes
3 6oz. cans tomato paste
15 oz. can tomato souce
8 oz. can tomato sauce.
(Optional: add 1/4 cup of snipped parsley)
1 Tablespoon brown sugar or white sugar
1 1/2 teaspoon salt
2 teaspoons oregano
1/2 teaspoon thyme
1 bay leaf
1 teaspoon basil.
2 cups water.

Simmer, uncovered, 1 1/2 to 2 hours.

Carol has "no idea" how many this serves, "maybe eight, possibly more". We always had enough for a couple of meals with three hungry teenagers.
